Pumpkin Bread

Not Low-fat...but worth it.

Preheat 350
1 hour for reg. loaf pan; 30-40 mins. for mini loaf pans; 15-20 mini muffins

4 eggs
3 cups sugar
1 cup oil
2/3 cup water
2 cups pumpkin
3 1/2 cups flour
2 tsp baking soda
3 tsp cinnamon
2 tsp nutmeg
2 tsp clove
1 1/2 tsp salt

Mix the eggs, sugar, oil and water until blended. Add pumpkin, and spices. Blend completely. In a seperate bowl mix flour, baking soda and salt. Slowly add the dry to the wet.

Spray pans with non-stick spray. Fill pans 1/2 to 2/3 full. Bake.

Enjoy the aroma and share.

If you want to get fancy...blend real vanilla extract, cream cheese and a bit of sugar. Blend and spread.

My wife wanted a Thanksgiving dinner for her B-day. (Aug 4th)
(She likes to cook - and DOES. IT. WELL.) We never go out to eat.....hers is better.
Anyways.............
She went to our grocery store on her B-day......guess what? They only order 4 ficken turkeys per month during slow season. None. Zip. Zilch. Not one turkey available for purchase. Not one.

So she went yesterday and got one! Little 12 pounder. Baked it off. We ate like kings....all da fixins.

So tonight! Yes - Turkey sammich with the slice of tubed cranberry sauce.....lil mayo.....Oh s***, now I hungry!


Made and eaten. Chocolate cake and ice cream too.

BTW...My birthday is actually Aug. 2nd.

I agree this happens. As a server...waitress...whatever you'd like to call me...when we are SLOW we look for other things to do. I have been guilty of losing track of time when I only have 1 table. I head off and bleach coffee cups, help the Chef's with prep or help put inventory away.

Being slow can also be the worst service ever because you hang out at the table and take it to the other extreme. Spend too much time making sure everyone is happy.

When I am off-the-hook busy...I am always on the floor. Attention on demand even if your request isn't met instanteously.
